The dream was to carve out a space where we could grow something to share with our community.

Maintaining autonomy and creative control from start to finish was imperative. Working with Mother Nature and all that she gives us to craft our vision of the southern oyster still remains our primary focus.

Aquaculture is farming year round in a dynamic environment that requires patience, resilience…and then even more patience.

An oyster’s flavor profile is a direct result of the water in which it is grown, so site selection was imperative to the continued success of the farm.

Choosing the correct grow out method based on site conditions was critical. The wrong choice could result in slow growth or worse… high mortality.

Our farms are designed to maintain our commitment to crafting a southern oyster that is unmatched.

Oyster aquaculture is a craft, and the farmer has as much input and control as Mother Nature will allow.

The strength of our oysters is a direct reflection of the exceptional environment in which they are raised. Situated in the pristine waters of North Topsail, NC, our oysters thrive in clean, nutrient-rich tidal flow. The balance between freshwater from upriver and saltwater from the inlet nourishes our oysters twice a day, providing them with a rich variety of natural marine algae and minerals that result in oysters with superior flavor, strength, and integrity.

Meet The Founders

Hold Fast Oyster Co. is a labor of love born from salt air, shared dreams, and a deep respect for the water. We're a husband-and-wife team—Matt & Kim —and together, we’re building something that’s as much about place and purpose as it is about oysters.

Our journey started with a deep appreciation for coastal life and a desire to create something lasting. After years of dreaming, planning, and hands-in-the-mud hard work, Hold Fast took root in the pristine waters of North Topsail, North Carolina. What began as a passion for sustainable seafood has become our full-time mission: to grow premium oysters with care, integrity, and a strong sense of stewardship.

As partners in life and business, we each bring something different to the table—Matt handles the farm operations, tides, gear, and daily rhythms of the water, while Kim brings a background in marketing and sales, helping to connect our oysters to chefs, distributors, and ocean-loving folks near and far.

Together, we believe in staying grounded in what matters most: clean water, honest work, and a commitment to our community. Our name, Hold Fast, is a nod to perseverance and grit—traits we carry with us through every storm, sunrise, and harvest.

    My Piscean dream of living and working on the water began at a young age. As a kid my daydreams consisted of swimming, becoming a pirate or meeting the mermaid of my dreams. I grew up on the Eastern Shore of Maryland, nestled between the Atlantic Ocean and the Chesapeake Bay. For college I chose Orlando, FL which placed me equidistance to the Atlantic and the Gulf of Mexico. I majored in Biology, then became a marine mechanic by trade. I’ve essentially been an oyster farmer in training all of my life.

    Fittingly raised in the town of Bivalve, on the Eastern shore of MD, Kimberly has always had an entrepreneurial spirit and an altruistic heart. She obtained a business degree from Temple University in Philadelphia and has devoted twenty years to the healthcare industry throughout the Mid-Atlantic and Carolinas as a business developer.
